These high-protein, gluten-free donuts are the perfect balance of indulgence and performance fuel—ideal for a post-workout treat or a better-for-you morning bite. Made with Beforeyouspeak Performance Coffee and topped with a creamy espresso glaze, they deliver a smooth coffee kick with every bite. Easily adaptable to be dairy-free or vegan, so you can have your donut and hit your goals too.
Ingredients:
1 cup gluten free flour
½ cup vanilla protein
2 tsp baking powder
½ tsp salt
2 egg
½ cup maple syrup
¼ cup coconut oil
¼ cup high protein yoghurt
¼ cup coconut milk (or non dairy milk of choice)
2 sachet Beforeyouspeak Coffee Performance Coffee Caramel + ¼ cup boiling water
Espresso Glaze:
¼ cup icing sugar
½ cup yoghurt
1 tbsp espresso powder + 2 tbsp boiling water
Method:
- Preheat oven to 180C and grease a donut tray.
- In a small glass add coffee sachets with boiling water and let sit to the side.
- In a mixing bowl, combine flour, protein, baking powder, and salt. Stir to combine.
- In a separate mixing bowl, combine eggs, maple, coconut oil, coconut milk, yoghurt and coffee liquid.
- Wisk to combine.
- Pour wet mixture into dry and whisk to combine.
- Transfer to greased donut tray.
- Bake for 12 minutes.
- Let cool.
- Prepare glaze by combining icing sugar and yoghurt in a small bowl.
- Add in coffee liquid and stir.
- Dip cooled donuts into glaze and enjoy.
