No-Bake Collagen Mocha Brownie Bites

Rich, chocolatey and infused with a coffee kick, these No-Bake Collagen Mocha Brownie Bites are the ultimate feel-good treat. Made with real ingredients and boosted with collagen, they come together fast with zero baking required. They’re perfect for a quick energy hit when sweet cravings strike.

Ingredients

Brownie Base

Chocolate Layer

  • 1/3 cup coconut oil, melted
  • 1/3 cup cacao
  • 2 tbsp maple syrup
  • Pinch of salt
  • Few almonds to top

Method

  1. Place the dates in a bowl and cover with boiling water. Soak for 5 minutes, then drain well.
  2. Add the soaked dates into a food processor along with all remaining brownie base ingredients. Blend until the mixture is sticky and well combined.
  3. Press the mixture firmly into a silicone loaf pan, or a lined loaf pan, smoothing the top evenly.
  4. In a small bowl, mix together all chocolate layer ingredients until smooth and glossy.
  5. Pour the chocolate layer over the brownie base, spreading evenly. Finish with a pinch of salt and a sprinkle of almonds on top.
  6. Place in the fridge to set (or the freezer if you’re short on time OR in desperate need of a sweet treat).
  7. Once firm, remove from the pan and slice into bite-sized pieces.
  8. Sit back, relax and enjoy your sweet treat!
