Mocha Fudge Crunch Bars

This delicious recipe from our friend Em Swanston can be easily adapted to suit your personal health goals and nutritional needs, and is guaranteed to cure 3:30itis!


1 Bowl + 30 mins! Here's how you do it:

Makes 10 large bars or 20 blissful bites

Ingredients: 

Crispy Base:

  • 1/2 Cup peanut butter
  • 1/4 Cup (liquid) coconut oil
  • 1/4 Cup maple syrup - Can sub for sugar free
  • 2 Tbsp melted choc 
  • 1 tsp vanilla
  • Pinch of salt
  • 1 1/2 Cup of crispy cereal
  • 1scp Macro Mike Choc caramel almond protein (vanilla, caramel or deluxe choc are 🤤 too)
  • 1/4 Cup chopped peanuts
Caramel Filling:
  • 1/4 Cup almond butter 
  • 2 Tbsp liquid coconut oil
  • 2 Tbsp maple syrup
  • 1/2 Tsp vanilla
  • Pinch of salt
Topping:

Method:

  1. Mix the base ingredients excluding cereal until smooth
  2. Add cereal
  3. Press into a lined loaf tin
  4. Mix caramel ingredients
  5. Spread onto base
  6. Freeze for 15-20 mins until set
  7. Melt chocolate, espresso, coconut oil and combine
  8. Slice to your desired size
  9. Drizzle with melted chocolate
  10. Devour!
    Note - you can make in muffin cases so you don't have to mess with slicing & that way they are pre-portioned!
