You know those over-ripe bananas you've been saving in your freezer for months *just in case*? Well now's the time to pull them out!
This recipe by @emsswanston is a little slice of heaven, and easily adaptable to suit a range of dietary and lifestyle needs. Light and fluffy banana bread topped with coffee spiked, rich & creamy frosting? Yes please!
Ingredients
Banana Bread
- 2 eggs
- 2 large over-ripe bananas, mashed
- 1 tbsp vanilla
- 1/4 cup almond butter
- 1/2 cup sugar-free maple syrup
- 2 cups almond flour
- 1/4 cup vanilla protein powder
- 1 tsp baking powder
- 1/2 tsp baking soda
Frosting
- 1 cup vanilla yoghurt
- 1 tbsp thickened coconut cream OR a splash of milk
- 1-2 tbsp icing sugar or powdered sweetener of choice
- 1-2 tbsp vanilla protein powder
- 1-2 tsp Performance Coffee The OG
- 1/2 tsp vanilla
Method
- Combine banana bread ingredients in a large bowl
- Pour into a brownie pan and bake @ 175’C/350’F for 30-40 mins (40-60 if using a standard loaf pan as its taller)
- Remove banana bread and allow to cool
- In the meantime, combine frosting ingredients until smooth
- Apply icing generously to the cool banana bread
- Slice and enjoy!
