These healthy, easy to make, perfectly fudgy and delicious brownies are coffee spiked, and boosted with extra vitamins, minerals and superfoods thanks to Period Coffee! - Plus, they're vegan friendly, dairy, and gluten free 🎉
Ingredients
- 1 cup mashed sweet potato
- 1/2 cup maple syrup
- 1/2 tsp vanilla bean
- 1/4 cup almond butter
- 1/4 cup coconut oil
- 1/2 cup gluten free flour
- 1/3 cup cacao
- 2 sachets Period Coffee
- 1 egg
- 1 tsp baking soda
- 1 tbsp boiling water
- 1/2 cup chopped dark chocolate
Method
- In a saucepan, place peeled and diced sweet potato in with water and bring to a boil.
- Boil until sweet potato is soft.
- Preheat oven to 180C.
- In a mixing bowl combine mashed sweet potato, maple syrup, coconut oil, egg and almond butter.
- Use an electric mixer to mix until combined.
- Add in flour, cacao, baking soda, vanilla bean, coffee sachet and boiling water.
- Use a spatula to combine.
- Mix in chopped chocolate pieces.
- Transfer to a lined 8 inch baking tin.
- Cook in oven for 25 minutes.
- Let cool, slice and enjoy.
