Dark Chocolate Peanut Butter Eggs

These Peanut Butter Protein Eggs are the perfect blend of indulgence and nourishment for Easter (or any time you’re craving a sweet treat). Soft, creamy, and packed with protein, giving you a little boost with every bite. Coated in rich dark chocolate and a hint of coffee for extra depth, they’re fun to make, impressive to serve, and utterly delicious to devour, these little goodies are perfect for gifting, sharing, or keeping all to yourself!

Ingredients:

Coating

  • 3/4 cup dark chocolate
  • 1 Tsp coconut oil
Method:
  1. Line a baking tray with parchment paper. 
  2. In a large mixing bowl, combine the filling ingredients. 
  3. Spoon a large tablespoon of mixture, shape in to eggs and place on the parchment paper. Repeat until all mixture has been used. 
  4. Place the eggs in to the fridge for 15 - 20 minutes until set. 
  5. Melt the chocolate and coconut oil in 15-20 second intervals in the microwave or until completely melted (this can also be done over a double boiler). 
  6. Remove eggs from the fridge, coat them in the melted chocolate and place back on the tray. 
  7. Return to fridge and set until the chocolate hardens. 
  8. Enjoy!
