Packed full of protein and collagen thanks to our Cookies & Cream Complex, this easy peasy mug cake is ready in a flash! And it's dairy, gluten, and refined sugar free! 🍪
Ingredients
- 1 tbsp Cookies & Cream Collagen Complex
- 2 tbsp vanilla plant based protein
- 3 tbsp almond flour
- 1/4 tsp baking powder
- 1/4 tsp salt
- 1/2 tbsp coconut oil, melted
- 1/4 tsp vanilla extract
- 1 flax egg (can sub 1 regular egg)
- 1 tbsp almond milk
- Optional toppings: Chocolate sauce (we used Natvia), crushed cookies, choc chips or cacao flakes
Method
- In a medium-large sized mug, combine the creamer, protein powder, almond flour, baking powder and salt.
- Create a well in the centre and add the coconut oil, vanilla extract, egg, and almond milk and combine with a fork until just combined.
- Microwave for 2-3 min in 1 min intervals.
- Top with whatever your heart desires. Enjoy!
