Cinnamon Scrolls, with a side of Immunity!

Ingredients

For the Dough

  • 1/2 cup of oat flour
  • 1 tsp baking powder
  • 2 tbsp of sugar-free sweetener
  • 1 tsp of ground cinnamon
  • 1/2 sachet of AM or PM  Beforeyouspeak Immunity Coffee ☕️
  • 1/2 cup of greek yoghurt or vegan alternative

For the Filling

  • 2 tbsp sugar free maple syrup
  • 1 tsp of corn starch
  • 2 tsp of ground cinnamon
  • 1/2 sachet of AM or PM  Beforeyouspeak Immunity Coffee ☕️
  • 1/4 tsp vanilla extract

For the Icing

Combine 1 tbsp of dairy free yogurt (if vegan) with 1 tbsp of plant based milk, 1 drop of vanilla extract & 1 tbsp sugar-free sweetener.

Method

  1. Preheat the oven to 200 degrees Celsius
  2. Mix all the dry ingredients for the dough together until well combined
  3. Mix in the wet ingredients for the dough with the dry and mix until combined
  4. Place the dough onto a floured surface, knead and roll out into a long rectangular shape
  5. Mix the filling ingredients together and spread evenly onto the dough
  6. Cut the dough evenly into 2 strips
  7. Roll up the strips into a cinnamon scroll shape and place into a ramekin or small baking bowl
  8. Place into the oven to bake for 15-20 minutes (surface should be golden brown)
  9. Let it fully cool then add on the icing
  10. Enjoy this delicious treat!
