The kind of brownie that blurs the line between treat and wellness win? Say less.
These rich, fudgy bites are packed with better-for-you ingredients like almond flour, banana, and our Collagen Complex in Rich Chocolate. Add in a dose of Mocha Collagen Coffee and a silky, whipped ganache-style frosting, and you’ve got yourself a decadent, collagen-boosted brownie that hits the sweet spot and supports your glow from within. Perfect for a sneaky afternoon snack or a post-dinner indulgence that doesn’t derail your goals.
Brownies
- 1 egg - or flax egg
- 1 large overripe banana = 1/2 cup
- 1 Tbsp vanilla
- 1 Tbsp almond milk
- 2 Tbsp vanilla yogurt
- 1/4 cup maple syrup
- 1 cup almond flour
- 2 Tbsp cacao
- 2 Tbsp @beforeyouspeakcoffee Collagen Complex in Rich Choc flavour
- 1 sachet Collagen Coffee in Mocha flavour (save 1/2-1 tsp for the frosting)
- 1 tsp baking powder
- 1/2 tsp baking soda
Frosting
- 1 cup dark chocolate
- 1 cup coconut (or regular) cream
- 1 tbsp cashew butter
- 1/2-1 tsp Collagen Coffee in Mocha flavour
- Pinch of salt
Method
- Blend the banana, egg, vanilla, milk, yoghurt & maple syrup till smooth.
- Mix dry ingredients in a large bowl
- Add wet ingredients to dry ingredients and mix till smooth.
- Bake at 175’C/350’F for 25-30 mins (40-60 if using a standard loaf pan) I use a small 6 x 6 “brownie pan”
- Set aside to cool
- Whilst the brownie is cooking, prepare the frosting.
- Heat cream, pour onto dark chocolate, cashew butter and collagen coffee sachet powder.
- Don’t touch for 30 secs
- Stir till smooth
- Cool till spreadable, then add to the top of the brownies once cooled.
- Slice
- Devour!
