Choc Fudge Banana Bread Brownies

These rich, fudgy bites are packed with better-for-you ingredients like almond flour, banana, and our Collagen Complex in Rich Chocolate. Add in a dose of Mocha Collagen Coffee and a silky, whipped ganache-style frosting, and you’ve got yourself a decadent, collagen-boosted brownie that hits the sweet spot and supports your glow from within. Perfect for a sneaky afternoon snack or a post-dinner indulgence that doesn’t derail your goals.

Brownies

  • 1 egg - or flax egg
  • 1 large overripe banana = 1/2 cup
  • 1 Tbsp vanilla
  • 1 Tbsp almond milk
  • 2 Tbsp vanilla yogurt
  • 1/4 cup maple syrup
  • 1 cup almond flour
  • 2 Tbsp cacao
  • 2 Tbsp @beforeyouspeakcoffee Collagen Complex in Rich Choc flavour
  • 1 sachet Collagen Coffee in Mocha flavour (save 1/2-1 tsp for the frosting) 
  • 1 tsp baking powder
  • 1/2 tsp baking soda

Frosting

  • 1 cup dark chocolate
  • 1 cup coconut (or regular) cream
  • 1 tbsp cashew butter
  • 1/2-1 tsp Collagen Coffee in Mocha flavour
  • Pinch of salt

Method

  1. Blend the banana, egg, vanilla, milk, yoghurt & maple syrup till smooth.
  2. Mix dry ingredients in a large bowl
  3. Add wet ingredients to dry ingredients and mix till smooth.
  4. Bake at 175’C/350’F for 25-30 mins (40-60 if using a standard loaf pan) I use a small 6 x 6 “brownie pan”
  5. Set aside to cool
  6. Whilst the brownie is cooking, prepare the frosting.
  7. Heat cream, pour onto dark chocolate, cashew butter and collagen coffee sachet powder.
  8. Don’t touch for 30 secs
  9. Stir till smooth
  10. Cool till spreadable, then add to the top of the brownies once cooled.
  11. Slice
  12. Devour!
