Our friend Em Swanston has delivered another decadent delight with this dairy free, gluten free, choc-cherry coconut slice! A rich and tasty comfort food, perfect to indulge in curled up on the couch with a cuppa and a good book.
Ingredients
Base
1/4 cup almond butter
1/4 cup desiccated coconut
1/4 cup protein powder
2 tbsp cacao
2 tbsp maple syrup/sugar free maple syrup
2 tbsp coconut oil, melted
1 tsp Collagen or Adrenal Mocha Coffee
1 tsp vanilla essence
Pinch of salt
Coconut layer
1 1/2 cups desiccated coconut
3-4 tbsp dried cherries (or cranberries)
1.5 tbsp coconut oil
Topping
1/3 cup dark chocolate
1 sachet Collagen or Adrenal Mocha Coffee
1 tsp coconut oil
Vegan option - use Adrenal Mocha Coffee, vegan protein and your favourite vegan chocolate option.
Method
Mix Base. Press into a lined loaf pan. Blend coconut, cherries & coconut oil until it "sticks" when pressed. Press firmly onto base. Melt chocolate and coconut oil together, mix in coffee powder. Drizzle chocolate mixture over base. Freeze for 10 minutes.
Slice - Easiest if you flip the slice so the basing is facing up.
Devour!
