Combining cooked quinoa, roast veg, your favourite protein source and a zesty dressing like tahini or lemon & garlic dressing, you can't go wrong! Chicken Potato Salad
My personal childhood picnic favourite, there's no such thing as a bad potato salad! This recipe adds asparagus for a veggie boost, and will last in the fridge for a few days with no problem. Best served hot or cold, whatever you prefer, it's the ultimate filling, comfort food. To save even more time (and add more flavour 😋), grab a pre-cooked roast chicken from the supermarket and shred this in before mixing!
Coffee Spiked Chilli Beans
Yes, you read that correctly. Not only is this DELICIOUS dish hearty and filling, it'll give you an afternoon caffeine kick too! This dish re-heats well so it can be prepped in bulk, just add fresh corn chips and your desired toppings as you go! If you want to bump up the protein, add some lean beef mince when preparing. Coconut Curry Chicken
This is one of the easiest, one-pan curry recipes we've found, that doesn't compromise on taste! It's also super customisable, you can substitute chicken for any protein source including a vegan option, and tastes just as amazing with cauliflower rice if you want to drop the carbs down a touch.
Honey Sesame Chicken
A Chinese takeaway favourite, this recipe is far healthier than everyone's go to deep fried sweet & savoury treat. Featuring grilled chicken and a healthy dose of veggies, this recipe is sure to be a source of break room envy, and can be frozen if cooked in bulk! Best served with either rice or cauliflower rice, you can dial up (or down) the spice factor to suit your personal taste preferences.
