Ingredients:

  • 2 ripe bananas, mashed
  • 2 eggs
  • 1/4 cup coconut oil, melted
  • 4 tbsp maple syrup or honey
  • 2x sachets BYS performance coffee
  • 2 cups almond meal
  • 1 tsp cinnamon
  • 1 tsp baking soda (bicarb)
  • Pinch of salt


Method:

  1. Preheat oven to 180 degree Celsius (fan forced).
  2. Add 12 muffin cases to a muffin tray and set aside.
  3. Add mashed bananas, eggs and maple syrup to a bowl and mix together well. Add in melted coconut oil and mix together.
  4. Add in almond meal, BYS performance coffee, cinnamon, baking soda and a pinch of salt.
  5. Mix together well.
  6. Scoop mixture evenly into the 12 muffin cases.
  7. Place in the preheated oven and bake for 22 minutes.
  8. Remove from oven and test with a knife (if knife comes out clean, muffins are ready!)
  9. Allow to cool before removing from muffin cases & store in an airtight container.
  10. Consume within 5-7 days or freeze to keep for longer.
