Ingredients
Muffins
- 2 eggs (flax eggs for vegan alternative)
- 2 tbsp dairy free vanilla yoghurt (coconut yoghurt for vegan option)
- 2 tbsp almond milk
- 1 tbsp vanilla extract
- 3/4 cup almond meal
- 2 tbsp cacao
- 1/4 cup preferred sweetener or brown sugar
- 1/2 tsp coconut flour
- 1 sachet of Beforeyouspeak Immunity Coffee (AM for vegan or PM for decaf)
- 1 tsp baking powder
- 1/2 tsp baking soda
- Pinch of salt
- 1 serve Beforeyouspeak Collagen Creamer (optional, vegan substitute for Keto Creamer)
Filling
- 1/2 cup choc hazelnut butter
Frosting
- 1 cup coconut cream
- 1 cup pure dark chocolate
- 1 sachet of Beforeyouspeak Immunity Coffee (AM for vegan or PM for decaf)
- 1 tsp vanilla extract
- Pinch of salt
Method
- Combine all muffin ingredients, spoon mixture evenly into muffin liners, or a non stick muffin tray, and bake at 175°c for 10-12 minutes
- While the muffins are cooling, prepare the icing by heating the cream and adding the chocolate, coffee and vanilla. Allow the chocolate to melt for 30 seconds and stir until smooth
- Set the icing mixture aside to cool and use a knife to carefully cut a hole in the top/centre of each muffin.
- Add the nut butter into the hole, frost and devour!
