Decadent, Fudgy, Sweet Potato Brownies

These healthy, easy to make, perfectly fudgy and delicious brownies are coffee spiked, and boosted with extra vitamins, minerals and superfoods thanks to Period Coffee! - Plus, they're vegan friendly, dairy, and gluten free 🎉

Ingredients

  • 1 cup mashed sweet potato
  • 1/2 cup maple syrup
  • 1/2 tsp vanilla bean
  • 1/4 cup almond butter
  • 1/4 cup coconut oil
  • 1/2 cup gluten free flour
  • 1/3 cup cacao
  • 2 sachets Period Coffee
  • 1 egg
  • 1 tsp baking soda
  • 1 tbsp boiling water
  • 1/2 cup chopped dark chocolate

Method

  1. In a saucepan, place peeled and diced sweet potato in with water and bring to a boil.
  2. Boil until sweet potato is soft.
  3. Preheat oven to 180C.
  4. In a mixing bowl combine mashed sweet potato, maple syrup, coconut oil, egg and almond butter.
  5. Use an electric mixer to mix until combined.
  6. Add in flour, cacao, baking soda, vanilla bean, coffee sachet and boiling water.
  7. Use a spatula to combine.
  8. Mix in chopped chocolate pieces.
  9. Transfer to a lined 8 inch baking tin.
  10. Cook in oven for 25 minutes.
  11. Let cool, slice and enjoy.
