Ingredients
For the Dough
- 1/2 cup of oat flour
- 1 tsp baking powder
- 2 tbsp of sugar-free sweetener
- 1 tsp of ground cinnamon
- 1/2 sachet of AM or PM Beforeyouspeak Immunity Coffee ☕️
- 1/2 cup of greek yoghurt or vegan alternative
For the Filling
- 2 tbsp sugar free maple syrup
- 1 tsp of corn starch
- 2 tsp of ground cinnamon
- 1/2 sachet of AM or PM Beforeyouspeak Immunity Coffee ☕️
- 1/4 tsp vanilla extract
For the Icing
Combine 1 tbsp of dairy free yogurt (if vegan) with 1 tbsp of plant based milk, 1 drop of vanilla extract & 1 tbsp sugar-free sweetener.
Method
- Preheat the oven to 200 degrees Celsius
- Mix all the dry ingredients for the dough together until well combined
- Mix in the wet ingredients for the dough with the dry and mix until combined
- Place the dough onto a floured surface, knead and roll out into a long rectangular shape
- Mix the filling ingredients together and spread evenly onto the dough
- Cut the dough evenly into 2 strips
- Roll up the strips into a cinnamon scroll shape and place into a ramekin or small baking bowl
- Place into the oven to bake for 15-20 minutes (surface should be golden brown)
- Let it fully cool then add on the icing
- Enjoy this delicious treat!
