Ingredients
- 2 cups wholemeal plain flour
- 1 cup almond meal
- 1/4 cup coconut sugar
- 1 tbsp Beforeyouspeak Collagen Complex - French Vanilla
- 1 sachet Beforeyouspeak Collagen Coffee - Unsweetened
- 1 tsp baking powder
- 1 tsp cinnamon
- 1 tsp nutmeg
- Salt
- 3 bananas, overripe
- 2 eggs
- 1/3 cup coconut oil
- 1/3 cup honey
- 1/2 cup almond milk
- 1/4 cup crushed walnuts
Method:
- Preheat oven to 180°C and line a loaf tin with baking paper.
- In a large bowl, mash the bananas until smooth. Add the melted coconut oil and honey, and whisk until well combined.
- Add the eggs and almond milk, mixing until fully incorporated.
- In a separate bowl, combine the wholemeal flour, almond meal, coconut sugar, collagen complex, collagen coffee, baking powder, cinnamon, nutmeg, and a pinch of salt.
- Gently fold the dry ingredients into the wet mixture until just combined. Avoid overmixing.
- Pour the batter into the prepared loaf tin and smooth the top.
- Bake for 40–45 minutes, or until a skewer inserted into the centre comes out clean.
- Allow to cool in the tin for 10–15 minutes before transferring to a wire rack to cool completely.
- Once cooled, top with crushed walnuts, slice, and serve.
