Vanilla Cookie Mug Cake

Made with healthy fats & fibre thanks to our Vanilla Keto Creamer, this easy peasy mug cake is ready in a flash! And it's dairy free, gluten free and vegan ūüć™

Ingredients

  • 1 tbsp Beforeyouspeak¬†Vanilla Keto¬†Creamer
  • 2 tbsp vanilla plant based protein
  • 3 tbsp almond flour
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 1/2 tbsp coconut oil, melted
  • 1/4 tsp vanilla extract
  • 1 flax egg (can sub¬†1 regular egg)
  • 1 tbsp almond milk
  • Optional toppings: Chocolate sauce (we used Natvia), crushed cookies, choc chips or cacao flakes

Method

1. In a medium-large sized mug, combine the creamer, protein powder, almond flour, baking powder and salt.

2. Create a well in the centre and add the coconut oil, vanilla extract, egg, and almond milk and combine with a fork until just combined.

3. Microwave for 2-3 min in 1 min intervals.

4. Top with whatever your heart desires.
